Have you ever had a recipe that people you don't even know call you to get? This is mine... pepper jack chicken chili. I made it for my brother and then he made it for his wife's family and the calls started coming.
The slightly awkward phone call goes.."Hello Jessie? Hi, this is so and so. I know you don't know me but I had your chicken chili and I was just wondering if I could have the recipe for it?"
And of course I give it to them. I'm not one to hoard the goods when I have them. I'm all about sharing the wealth... And this is gold my friends! I've never met anyone yet that hasn't liked it.
- 2 cups chicken, cooked and chopped small or shredded
- 2 15oz cans great northern beans, drained
- 1 00oz jar of red salsa, any heat level you like
- 1 8oz block of pepper jack cheese
- 1/2 cup water
In a large pot or skillet add the chicken, beans, salsa, and water. Mix and bring to a simmer
Meanwhile, grate pepper jack cheese block. I find it's easiest to grate the cheese but you can cut it up into chucks too. Just make sure they are small.
Stir cheese into the salsa, mix until completely combined. This is where the grating helps. If you use chucks, it's going to take a little longer to get all the cheese melted and mixed in.
In my house, we just need some white tortilla chips for scooping but sour cream, extra cheese, and/or green onions make excellent garnishes for this as well.
