Have you all heard of this amazing revolution in desserts called the poke cake? It's about the simplest thing to make in the world and you can make it in whatever flavor combinations you can think up!
Basically you make a cake, poke holes in it, and then cover it in pudding... Simple right???
Maybe it was the almost 60 degree day we had last weekend, but I've seriously had a hankering for some kind of lemony sweet treat lately. So I ran out and grabbed the two things I needed to make a lemon pudding poke cake.
Ingredients
- Lemon cake mix - homemade or store bought work (prepared)
- 3 cups lemon pudding (prepared)
Instructions
Bake cake according to recipe in a greased 9x13 pan and set aside to start cooling.
When it's still slightly warm take the handle end of a wooden spoon (or something like it) and poke holes all throughout the cake.
Mix pudding according to package directions and whisk until it starts to become thicker.
Pour or spoon the pudding into the holes of the cake first and then pour the rest over the top smoothing it out evenly.
Place in the refrigerator to cool. Technically it only needs a couple hours but I left mine in overnight. Hello Sunday morning breakfast!

We have been fans of poke cakes for a long time (maybe a Midwest thing?) but I have never had lemon! Must get ingredients for this!

ReplyDeleteDon't make this in an aluminum pan. The acid will eat holes in the pan, in only a few hours....still my favorite cake, and it has been for years.
