Crunchy Caramel Apple Clusters

Fall 2012 is officially upon us! It's by far my favorite season of the year because I get to cook all of my favorite Fall time comfort foods like my Cream Cheese Tomato Soup, or these decadent little caramel apple clusters. 

While these are definitely a dessert, they are also semi nutritious as well. The cereal is full of fiber and the little bits of apple are good for you too. I don't feel as bad about eating a couple handfuls of them as I would eating a giant brownie or a bowl of ice cream. 

I hope you'll give them a try. I think you'll be hooked if you do!

Ingredients
  • 3 cups Honey Bunches of Oats cereal, divided
  • 2 packs Werther's Chewy caramels (about 24)
  • 1 tbsp Water
  • 1 cup dried and diced apple pieces

* I dried my own apple pieces for this recipe. To oven dry apples, cut into desired shape (bits, slices..) and put them in ice water with 2 lemons cut into slices to prevent browning. Set your oven to the lowest temperature possible. Remove apples from water and dry with paper towel. Set them out on a backing sheet, making sure they are not touching each other at all. Place apples in the oven and leave the door open slightly. Place a fan by the oven to help the air flow. The apples with take 2 - 3 hours to dehydrate depending on their size. 

Directions
  1. Crush 1 cup of the cereal in a food processor or in a bag using a rolling pin. Set aside.
  2. In a large bowl combine the remaining cereal and apple pieces.
  3. In a separate bowl, melt caramels with water in the microwave. Stirring every 30 seconds until completely smooth.
  4. Pour melted caramel over the cereal and apples and toss together to evenly coat.
  5. Form cereal into clusters of whatever size you like. 
  6. Roll each cluster in the cereal crumbs to coat and set aside to harden.
The clusters can be stored in the refrigerator to keep fresh. The recipe yields about 50 clusters.

A Crafter's Dream Christmas Giveaway

I'm so excited to announce that I will be joining up with A Crafter's Dream Christmas Giveaway with My Merry Messy Life, Earning-My-Cape, and Tutus & Tea Parties,

Cream Cheese Tomato Soup


There's just something about tomato soup for me. It's one of my favorite comfort foods for the Fall and Winter months. This recipe is THE BEST! It's simple, cheap, and fast to throw together and it tastes oh so good. My toddler even loved it with his grilled cheese for dunking.   


Ingredients

1 Large Onion
1/2 Stick Butter
32 oz. Condensed Tomato Soup
28 oz. Can Crushed Tomatoes 
2 Cups Half & Half
8 oz. Cream Cheese


Directions
  1. Dice onions and cook them in the half stick of butter until soft.
  2. Meanwhile, in a mixed, food processor, or blender mix cream cheese and condensed tomato soup.
  3. Whip together until completely mixed into a creamy consistency.
  4. Add crushed tomatoes, cream cheese and soup mixture, and half & half in the pot. Let simmer until ready to serve. Garnish as desired.

I like a grilled cheese with my soup too!

This recipe can also be frozen for storage. To freeze, place the soup in a zip locked freezer bag and push out as much of the air as you can possibly get out. It will stay fresh for about 3 months.
